Recipe for your week


Thai Shrimp Curry

Thai Shrimp CurryMakes 8 serving
Ingredients:
  • 1 tbls. peanut oil
  • 1 c. onions thinly sliced
  • 1 c. green onions about 8
  • 2 tbls. green curry paste
  • 1 14oz. can cocount milk
  • 1 c. chicken broth
  • 3 tbls. thai fish sauce
  • 2 tsp. sugar
  • 1 cup ripe plum tomatoes diced
  • 2 lbs. shrimp uncooked
  • Cilantro fresh, chopped
  • Lime wedges
Method:
  • Heat peanut oil in heavy skillet over med. high, add sliced onion – stir fry until soft and beginning to brown – 4 min.
  • Reduce heat to med.
  • add the green curry and green onion – stir fry until fragrant – about 1 min.
  • add the coconut, chicken broth, fish sauce and sugar – bring to a boil
  • add the tomatoes and boil 2 min.
  • add the shrimp and cook just until done – about 3 min.
  • transfer curry to a large, shallow bowl
  • garnish with cilantro and lime
