Thai Shrimp Curry
Makes 8 serving
Ingredients:
Ingredients:
- 1 tbls. peanut oil
- 1 c. onions thinly sliced
- 1 c. green onions about 8
- 2 tbls. green curry paste
- 1 14oz. can cocount milk
- 1 c. chicken broth
- 3 tbls. thai fish sauce
- 2 tsp. sugar
- 1 cup ripe plum tomatoes diced
- 2 lbs. shrimp uncooked
- Cilantro fresh, chopped
- Lime wedges
- Heat peanut oil in heavy skillet over med. high, add sliced onion – stir fry until soft and beginning to brown – 4 min.
- Reduce heat to med.
- add the green curry and green onion – stir fry until fragrant – about 1 min.
- add the coconut, chicken broth, fish sauce and sugar – bring to a boil
- add the tomatoes and boil 2 min.
- add the shrimp and cook just until done – about 3 min.
- transfer curry to a large, shallow bowl
- garnish with cilantro and lime
